Teach Me Tuesday – Easy Veggie Dip

Today’s Teach Me Tuesday (TMT) is intended to go with the theme of the week which is the 4th of July. A lot of American’s like to spend the 4th with friends and family, outside, with lots of shared food. I know when I think of the 4th, I think of picnics, potlucks, bbq’s … good food.

I am a pretty picky eater. I don’t like to admit that because I don’t sound like a “grown-up”, but I have the palette of a 6 year old. This drives my Hubs crazy – he thinks I am a bad influence on the kids trying new things. I deny this … but I secretly know it is true. I hate to admit when I am wrong.

When I go to a social event, I just pray that no one is serving eggplant or squash or God forbid, anything with raw tomatoes. Just the thought of that raw tomato gelatinous seed goo makes me get the weebs. I do like cooked tomatoes. I don’t know – just accept it. I am a meat and potatoes, Mid-west girl – don’t give me anything “weird” or “foo-foo”.

Anyway … today I am going to show you how to make a simple, but yummy vegetable dip and a cute way to serve it for your 4th of July picnic! I like veggie dip a lot – even though I really don’t like vegetables. I do like raw carrots, celery and cucumbers and I really like these veggies dipped in something with mayonnaise.  I really am so sophisticated!

Ingredients:
2 cups (16 ounces) sour cream
3 tablespoons dried minced onion
3 tablespoons dried parsley flakes
1 teaspoon seasoned salt
Assorted fresh vegetables or crackers

Directions:
In a small bowl, combine the sour cream, minced onion, parsley flakes and seasoned salt. Cover and refrigerate for at least 1 hour. Serve with vegetables.

This is such a simple dip and tastes so good.  The longer it sits in the fridge the better it gets.  You can even make it the night before.  Chop up your veggies the night before as well and you will be totally prepared the next day.  This is great because we all know that totally prepared  equals totally relaxed.  A good thing for Mom.

In addition to being a picky eater, I also don’t like my food to touch (except at Thanksgiving).  Geez – while I am writing this I am realizing I am a bit of a nut job and may need some food therapy.  Yikes.  Anyway … here is how I like to serve my veggies and dip.  I have used this idea several times and it is always a hit!

I just buy a pack of small plastic cups – plop some dip in the bottom – and stick in some veggies sticks.  This makes me so happy because I have my own little cup with my own dip.  No worrying about double dipping with that one kid at the picnic that always has mud and snot on his face and it is so easy to carry around!
