It has been raining here for two days now and is supposed to rain for two more. I love the rain … it makes me feel calm. I could totally live in Seattle and never complain about the rain. Weird? Maybe. These last couple days have turned into a cold rain and there is nothing better on a cold, rainy day than a bowl of steaming hot soup. I just made this creamy tomato tortilla soup for my family and it was a huge hit. It is easy and super tasty!

Creamy Tomato Tortellini Soup
{Adapted from Tasty Kitchen}
2 whole large Cloves Of Garlic Minced
2 Tbl Olive Oil
2 10 3/4 oz Cans of Condensed Tomato Soup
1/4 cup Sun Dried Tomatoes, chopped or 2 Tbl Of Sun Dried Tomato Paste
2 cups Half-and-half
2 cups Chicken Stock
1 tsp Onion Powder
1 Tbl Italian Seasoning
1/2 tsp Salt
1/2 tsp Pepper
1 whole 9 Oz Package Of Cheese Filled Tortellini
1/2 cup Shredded Parmesan Cheese, for garnish

That looks really good. The kids can’t have dairy right now and I’ve got substitutes for milk and butter but, can’t find dairy free cheese anywhere!! It’s killing us all………I will save this and take a pic of my sloppy version if I try it! :O
