Hey All … It’s Friday! Yipee!
Today’s Fabulous Friday Favorite (FFF) is kinda an oxymoron – Olympics and Cupcakes???
My twin daughter sent me this cartoon which totally cracked me up:
This is funny all on it’s own, but it is extra funny because I had just finished my fourth cupcake minutes earlier. My daughter and her friend are amazing little bakers and made the most incredible cupcakes I have eaten in a long time.
My daughter is on the right and her darling, sweet friend is on the left.
Now, let me just say I did not eat four cupcakes all in one sitting – but all within one day. That’s a little better – right? Who am I kidding? This was very very wrong.
Could you turn down this Spice cupcake with Maple/Vanilla frosting?
This is a pretty easy little cupcake with a HUGE “impress your friends” factor! The cupcake is just Duncan Hines Carrot Cake Mix (do not add the carrots). It is the frosting that is the WOW!
2 sticks Unsalted Butter
3 1/2 cups Powdered Sugar
2-3 Tbsp. Milk
1 Vanilla Bean scraped (you can substitute 2 tsp of vanilla extract, but don’t – it’s not the same)
2 Tbsp. Maple Syrup
2 tsp. Ground Cinnamon
Mix butter until smooth. Slowly add powdered sugar. Add milk to desired consistency and then add flavorings. You cannot make a mistake here – use as much or as little flavor as you like.
You will fall on the floor when you taste this frosting and when you get up, you will say “that Missi is not so bad for eating 4 of these cupcakes, I bet I could eat 6 easy!” At least that is what I like to imagine you would say to make myself feel better for stuffing 4 down my throat while watching the best athletes in the world.
