Chinese Chicken Salad – Yum!

Do you ever have those days where you just can’t get inspired?  My kids have been out of school for 1 week and I am exhausted!!  Our summer schedule hasn’t even really started yet and I can barely keep up.  I was asking my kids tonight to “inspire me” so I could get my post together.  The only response was from my youngest son – “Why don’t you do a post on why you like me best?”  Oh – great idea … thanks big guy!

So here is my inspiration for today … my yummy dinner from last night.  I know I don’t normally do recipes but this was a good one.  I found it on Pinterest – it was originally on FoodieCrush.com.

I am a Chinese Chicken Salad fanatic.  I order it a lot when I go out – but my favorite is the Applebee’s version.  It is so delicious, but the calorie count is a bit outrageous.  This recipe is a lower calorie version and super yummy.  My entire family devoured this salad and I doubled the recipe.

Here is the recipe:

Salad Mixture:

1-2 packages of fried Wonton strips (you can find these in the produce dept. by the croutons)
4 cups chopped romaine lettuce
1 chicken breast, shredded
2 green onions, chopped
1/4 cup sliced almonds, toasted lightly
1 tablespoon sesame seeds
2 cups cooked fusilli pasta noodles, cooled

Dressing:

1 1/2 tablespoons vegetable or grapeseed oil
6 tablespoons seasoned rice vinegar
1 teaspoon sesame oil (add more to taste if you prefer a strong sesame taste)
1 1/2 teaspoons sugar
2 teaspoons light soy sauce
2 tablespoon sesame seeds (do not double – it is too much)
1/2 teaspoon fresh ground pepper
1/8 teaspoon salt

1. In a large bowl, combine lettuce, chicken breast, green onion, almonds and pasta.
2. Combine dressing ingredients in a small bowl. Whisk well until sugar dissolves. Dress lettuce mixture with 2-3 tablespoons of sesame dressing and top with sesame seeds and wonton strips and serve.

This is a wonderful summer salad that is light but very filling.  I hope you give it a try – it will be worth it.
